“This tasting menu tells my story,” says Chef Pham. “It began in Vietnam, inspired by my grandmother, who instilled in me a deep respect for authentic flavours and craftsmanship. Over the years, my journey across Asia, from vibrant street kitchens to disciplined culinary traditions, has shaped my philosophy of balancing heritage with innovation”.
